watermelon salsaSummer eating means lots of opportunities for healthy eating.  Fresh fruits and vegetables tempt the palate, and grilling meats and veggies is preferable to frying (just don’t overdo outdoor grilling, as it does release carcinogens).

Last week we told you about our large shipment of locally grown watermelons.  So it seemed timely to also share one of our favorite summer recipes – watermelon salsa!

We like it because it’s quick and easy to make, nutritious (zero fat and very low-calorie), and – most of all – delicious!  Throw out your frying pan this summer, keep a batch of salsa in the fridge, and serve with all your broiled or grilled home cooking.

This recipe is from Eating Well Magazine:

3 cups finely diced, seedless watermelon

2 jalapeno peppers, seeded and minced

1/3 cup chopped cilantro

¼ cup lime juice

¼ cup minced red onion

¼ teaspoon salt, or to taste

Place watermelon, jalapenos, cilantro, lime juice, and onion in a bowl; stir well.  Season with salt.  We prefer it chilled before serving.

Makes 8 servings, ½ cup each at 26 calories per serving.
